Slightly Modified a Peas & Crayons Recipe | Makes: 3-4 sandwiches | Time: ~10 min
Ingredients
For the Chickpea Salad
15 oz canned #chickpeas, drained and rinsed
3 green onion, chopped
2 stalks celery, finely chopped
1/4 cup carrots, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup vegan mayo
1-2 tsp dijon mustard
1 tsp yellow mustard
1/8 tsp dried dill or fresh, to taste
1/8 tsp salt
1/8 tsp pepper
For the Sandwich
Bread
Bean sprouts
Instructions
Drain and rinse your chickpeas and add them to a large bowl. Mash with a potato masher until texture appears flaked, almost like tuna salad
Add remaining vegetable ingredients to the bowl with with the chickpeas, then add mayo, dijon, yellow mustard, dill, salt, and pepper. Stir well to coat.
Add to bread and sprinkle on some bean sprouts.
