I'm usually not one for salads, or I trick myself into eating them by calling them bowls. This salad a pretty unique combination of ingredients, though. Who couldn't love halloumi cheese, mixed lettuce, roasted peppers, roasted eggplant, butternut, zucchini, crunchy onion, sundried tomatoes, & roasted almonds dressed with honey mustard? And with all those non-lettuce ingredients, isn't it basically a bowl?
So when I get back to cooking my own food, the goal is to make a vegan version of this. I'm thinking eliminate the cheese and lettuce, serve the remaining ingredients over quinoa. The husband isn't such a fan of eggplant, so I'll probably either get rid of it or just add it to my bowl. It's definitely an easy one for him to add chicken to.

A minimal amount of walking, the weekend involved some intense hiking, climbing and scrambling. I need to at least rest. I could really use a massage, even.
