Life is hard. This vegan meal is not, especially since my husband cooked it instead of me.

Changes: added sesame oil; used fresh potatoes; used coconut sugar instead of date sugar; used lime juice instead of lemon
Ingredients
Coated the wok with sesame oil
2 #SweetPotatoes, spiralized
4 cups of chopped #broccoli
1/4 cup red curry sauce
~7 oz coconut cream
2 tbsp coconut sugar
2 tbsp lime juice
1 tsp salt
Instructions
Coat wok with sesame oil and add sweet potato noodles and broccoli on medium heat.
Immediately add in red curry sauce, coconut cream, salt, coconut sugar, lime juice, and mix until fully combined.
Cover the pan with the lid and let it cook (add a little water if needed).
Continue to stir noodles gently intermittently to prevent burning.
Cook until al dente.
Taste and adjust seasonings as necessary.
Serve hot!
