Sweet Potato Club with Cilantro Lime Cashew Mayo and a Side of Chilled Bell Pepper and Coconut Soup



Sweet Potato Club Sandwich with Roasted Red Pepper Soup

Sandwich by Connoisseurus Veg | Serves: 2 | Time: ~ 40 min


So 40 min for the sandwiches, but very little active time. That's why I'm calling it Quick and Easy.


Ingredients


For the Roasted #SweetPotatoes

1 tbsp sriracha

1 tbsp maple syrup

1 tbsp lime juice

1 tsp EVO

1/2 tsp liquid smoke

1 medium sweet potato scrubbed and sliced into 1/4 to 1/2 inch thick slabs

Dash of salt


For the Cilantro Lime Mayo (make the night before)

1/2 cup raw #cashews soaked in hot water (about 5 min) , drained, rinses

4 tbsp lime juice

4 tbsp fresh cilantro or more if you like, packed

1 tbsp water

salt to taste


For the Sandwiches

4 slices sandwich bread toasted

Handful of spinach

1 small tomato, sliced


Instructions


Roast the Sweet Potato

Preheat oven to 350°. Lightly oil or line a baking sheet with parchment.


Stir sriracha, maple syrup, lime juice, olive oil and liquid smoke together in small bowl.


Arrange sweet potato slabs on baking sheet and brush with about 1/4 of sriracha mixture. Bake 15 minutes. Flip, brush with another 1/4 of sriracha mixture, reserving the remaining half, and bake another 15 minutes, until tender. Remove from oven and sprinkle lightly with salt.


Make the Cilantro Lime Mayo

While sweet potato slices roast, place all ingredients into food processor bowl and blend until smooth, scraping down sides of bowl as needed.


Assemble the Sandwiches

Slather bread slices with cilantro lime mayo and stuff with sweet potato slabs, lettuce leaves and tomato slices. Drizzle with reserved sriracha mixture.


Soup by Green Evi | Serves: 2-4 | Time: ~5 min + chill time


Ingredients

4 jarred roasted #RedBellPeppers

1 can of #CoconutMilk

1 bunch of basil

1 cup of water/veggie broth

1 orange, juice

2 cloves of garlic (optional, and I went for it)

Salt, pepper

Red pepper flakes for garnish


Instructions

Drain and deseed bell pepper and add to a blender with every ingredients, then blend until smooth.


Adjust seasoning if necessary and serve cold
