Slightly Modified a Good Housekeeping Magazine Recipe | Serves: 4 | Time: ~45 minutes
Ingredients
1.5 tbsp EVO
Pinch of salt
3/4 cups celery
1/3 cups shallots
4 cloves garlic, minced
5 cups vegetable broth
2 cups #broccoli
2 cups sliced #spinach
1 cup sliced #mushrooms
1/2 cup #orzo
Ingredients
In a large pot, heat olive oil on medium. Add salt, celery, shallots, and garlic. Cook 8 minutes or until golden, stirring.
Add broth and broccoli. Heat to simmering on high. Reduce heat to medium-low; simmer 15 minutes, stirring occasionally.
Add spinach, mushrooms and orzo. Simmer 8 to 10 minutes or until starches and veggies are softened.
Remove from heat. Stir in basil pesto to taste.
