Pho is a type of #Vietnamese soup, typically made from beef stock and spices to which noodles and thinly sliced beef or chicken are added. It's totally delicious vegan style, though.
Slightly Modified a Golubka Kitchen Recipe | Makes: | Time: ~1 hr (start the night before)
Ingredients
2 star anise 2 cinnamon sticks 1 teaspoon whole coriander seeds 1 1/2 teaspoon black peppercorn 5 whole cloves 3 cardamom pods – green shells removed 1 medium onion, sliced into 8 wedges 3 garlic cloves, crushed 1 tbsp ginger 1/2 lb #shiitakes – hard stems removed, caps sliced 6 cups purified water 3 1/2 tbsp coconut aminos 1 tbsp rice vinegar 1/4 tsp sriracha 1 can #chickpeas 2 medium #sweetpotatoes, spiralized on thinnest setting 1 tbsp coconut oil 1 small #broccoli head, cut into florets Handful bean sprouts 1 tbsp lime juice, plus more for serving Handful each cilantro, basil and mint leaves 1 tbsp sesame seeds
Instructions
The night before you want to eat your pho, warm dried spices in a medium soup pot over medium heat, stir around until toasted and fragrant, for about 2-3 minutes. Add onion, garlic and ginger and toast for another couple of minutes, until fragrant and onion begins to get some colour. Carefully add water (it may splatter) and shiitake stems, followed by coconut aminos, brown rice vinegar and sriracha. Bring to a boil, lower the heat to simmer and cook, covered, for 30 minutes. Remove from heat and let infuse further overnight. I ended up doing two nights because I didn't feel like cooking yesterday. Strain, discard solids.
Warm the coconut oil in a medium saute pan over medium heat, add broccoli and saute for about 3-4 minutes, until they turn bright green in color. Set aside.
In the meantime, bring the broth you made last night to a boil, add chickpeas, #sweetpotato noodles and sliced shiitake caps. Adjust the heat to a simmer and cook for 3 to 5 minutes, depending on the type of spiralizer used. The thinner the noodle, the less time you'll have to simmer. Add sauteed broccoli to the broth, followed by bean sprouts.
Remove pho from heat, add lime juice, herbs and sesame seeds. Serve warm with more lime juice and/or fresh herbs.

Easy squat challenge day 3: 75.... not nearly as bad as I thought it would be. However it was a bit dicey at the end, so not looking forward to the 90 squats I have to do on Sunday. That's future Cate's problem though.
