It's my first time ever doing Secret Santa, and instead of going a complete easy route, I decided to make a couple things (on top of wine, candles, and funny post-it notes). Our group filled out little profiles to help the gift giving process, and my pick made it clear she loves junk food, but never buys it for herself. So I decided to make her healthy junk food.
Apparently one of her favorite things is a spicy nut mix from Trader Joe's. In a world full of allergies, though, our office is a nut-free zone. Chickpeas it is!
Recipe by Bowl of Delicious | Makes: 1.5 cups | Time: Just over 30 min.
Ingredients
1 can #chickpeas (#garbonzobeans, drained and rinsed)
1 tbsp EVO
1/4 tsp cumin (I put a little more)
1/8 tsp cayenne pepper (I put a little more)
S&P, to taste
Instructions
Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
Pat chickpeas dry.
Mix chickpeas, oil, cumin, cayenne pepper, and salt/pepper in a small bowl.
Spread chickpeas on prepared baking sheet evenly so they aren’t touching as much as possible.
Roast for 30 minutes. Turn heat off, and keep chickpeas in the oven until cool.
Store chickpeas in an airtight container or jar for up to a week.
