Ingredients
1 lb dried black #beans
½ yellow onion, diced
1 large carrot, chopped
1 large red bell pepper, chopped
2 tbsp tomato paste
12 ounces Guiness Irish Stout
4 cups veggie broth (homemade to reduce sodium)
1 tsp salt
1 tsp black pepper
½ tsp cumin
1 tsp garlic powder
2 tsp smoked paprika
1 tbsp gochugaru
1 large avocado, diced
½ cup cilantro, chopped
Gojuchang as a garnish
Instructions
Add the beans, onions, carrots, bell pepper, tomato paste, beer, broth, salt, pepper, cumin, garlic powder, smoked paprika and gochugaru to a slow cooker, stir to combine.
Cook on low for 10 hours or high for 6 hours. I chose to cook on high. Stir occasionally if possible.
Ladle into bowls, stir in gojuchang to taste, and top with avocado and cilantro before serving.
