"Salmon" Potato Soup

While we were on vacation in Finland last year, I got real lax with my diet and enjoyed a salmon soup. I immediately searched for a vegan version and came upon this one. Bonus, unlike the majority of soups I make, this one is a quick and easy recipe. If you're someone who buys potatoes in bulk, this could be a go to recipe for a last


It's essentially a potato soup, so not a great recipe for people avoiding carbs, but what can you do? It did sorta scratch the itch, but I'm still on the prowl for something more similar in flavor to salmon soup, ignoring texture issues. I think down the road, I'm going to try to get rid of the potatoes, maybe incorporate chickpeas and/or cauliflower.

Ingredients

6 cups boiling water

2 onions

3 tbsp EVO

2 ¼ cups #sweetpotato, cubed

2 medium #potatoes, cubed

2 tsp dried dill

1 ½ tbsp of Old Bay seasoning

1/2 tbsp lemon juice

2 ½ - 3 tsp salt

2 nori sheets

¾ cup vegan cream (3/4 cups cashews soaked in boiling water for at least 5 minutes, drained, blended with 1/2 cup of water)

Another ½ tbsp lemon juice

1 tsp sugar

Black pepper to taste

Fresh dill

Instructions

Bring water to a boil (I used a kettle, as suggested by Sandra). Peel the onions, cut them into four chunks and slice. Heat up a thick-bottomed pot. Add oil and sliced onions. Cook for a couple of minutes.


Add sweet potato cubes, regular potato cubes, dried dill, Old Bay and lemon juice. Cook for a couple of minutes.


Add about half of the salt and nori sheets ripped into four. Add boiling water, stir, cover the pot with a lid and let it boil for 10 - 15 minutes, until the potato is soft.


Remove the nori sheets from the soup. Add vegan cream, lemon juice, sugar, pepper and the rest of the salt. Boil for a couple of minutes uncovered.


Add fresh dill and boil for half a minute.


Taste and add salt, sugar or lemon juice if needed. Serve.


What I ate and drank today

7 glasses of water by dinner

1 egg white sandwich with kale and last night's tahini dressing

1 bowl of Life cereal

1/2 cup red bell pepper

2 cups of coffee

1 bowl of soup


Exercise

Stayed off the foot all together today, and lucky for me, I missed the cold.
