The weekend was really a make it work weekend. We ended up staying an extra night at the cabin, but without having planned anything for dinner. We took inventory of what we had on hand in boxes and cans, and this sandwich was born. This was on the fly, so I wasn't exactly measuring things and keeping an eye on time, so there's some estimation here.
Makes: 4 sandwiches / 12 balls| Time: ~30 min.
Ingredients
1 14-oz can white #beans of choice, drained and rinsed
1 cup cooked brown #rice, and cooled before mixing
1/4 cup panko breadcrumbs
1 egg or egg replacer
1/4 tsp salt
1 tbsp Italian seasoning
EVO for cooking
4 buns, warmed up or toasted if you like
Marinara sauce (ours was canned this particular evening)
Instructions
Hand mash the beans in a bowl, but not all the way. Add the remaining ingredients and mix well. Then form into balls the size of regular meatballs. At this point, I put the balls in the fridge to help them firm up just a bit more.
Warm 1 tbsp or so of EVO in a skillet over medium heat. Add the balls (in batches if necessary) to the skillet and cook till browned on each side.
Add balls to the rolls. Cover with marinara sauce.
