Refried Bean Soup (GF, V)

Best part of this soup, a couple days later you can use it as a game day dip. It's also super simple to make and very filling.

Changes: skipped tomatoes, doubled corn


Ingredients

1 large onion chopped

3-4 cloves garlic minced

1 green bell pepper chopped

1 1/2 cups vegetable broth (homemade to reduce sodium)

1 15 oz can vegan refried #beans

1 15 oz can cooked black beans

1 15 oz can sweet corn kernels

1 tsp cumin

1 1/2 tsp smoked paprika

1/8-1 tsp chipotle chili powder to taste

1 tsp hot sauce or to taste

Tortilla strips or chips for garnish


Instructions

Heat a large, non-stick pot and sauté the onion until it begins to brown. Add the garlic and bell pepper and cook for one more minute. Add all the remaining ingredients and cook until the flavors blend, 20-30 minutes. After I cooked it through, I actually just left it on low heat on the stove until we were ready to eat. I
