Ramen Rasta Pasta (V)

Definitely should have added some more veggies... but the flavor is solid!

Changes: used dried thyme and vegan cheese


Ramen Rasta Pasta (V)

Ingredients

4 cakes ramen

1½ tbsp olive oil

½ onion, sliced

½ red pepper, sliced

½ green pepper, sliced

½ yellow pepper, sliced

4 cloves garlic, minced

1 tbsp jerk seasoning

13½ oz can coconut milk

salt & pepper, to taste

1 tsp paprika

1 tsp thyme

¼ cup shredded vegan parmesan cheese


Instructions

Cook ramen noodles per directions on package.


In a sauté pan, heat oil and cook onion and peppers for ~5-6 mins until softened.


Add garlic and jerk seasoning and cook for another 2-3 mins.


Pour in coconut milk and season with salt, pepper, paprika, and thyme.


Let sauce simmer for 5 mins, then add noodles.


Cook for a few more minutes then add parmesan cheese.


When sauce thickens, it’s ready to serve.
