Pepian de Choclo (Corn, Chili Pepper, And Cilantro Stew) | Straight from Peruvian Delights | Serves: 6 | Time: ~40 min
Ingredients
2 tbsp oil
½ cup chopped onion
2 chopped garlic cloves
1 tbsp #AjiMirasol paste
2 yellow #ChiliPeppers, cut in thin stripes (or use in paste, as needed)
4 ears of #corn
2 cups vegetable stock
½ cup cilantro leaves
4 small or 1-2 large #zucchini, cut in cubes
Salt and pepper

Instructions
Blend the corn kernels and cilantro leaves with the vegetable stock until creamy.
In a pan with oil, over medium heat, saute the onion, garlic, and 2 chili peppers, stirring until golden.
Add the corn and cilantro paste, zucchini, salt and pepper, and cook, stirring, for 10-15 minutes, or until it has the consistency you desire. If it cooks too long it will get more tamale-like.

Ingredients
3 ripe #avocados
1 can of #chickpeas aka #GarbonzoBeans
1 can of artichoke hearts (slightly dried)
1 can black beans
1/2 cup chipotles in adobo
1/2 cup salsa verde
2 tbsp fresh chopped cilantro
1/4 cup chopped mint
S&P to taste
Splash of lime juice ('cause why not?)

Instructions
Remove the pit from the avocado and place cut side down on a grill pan. No oil needed.
Allow the avocados to sit on the hot grill for about 4 minutes. There will be grill marks.
Meanwhile, make un-chicken salad. Pulse chickpeas and artichokes hearts in food processor. Mix in remaining ingredients.
Scoop salad onto grilled avocados.
