And let me tell you why I am in LOVE with this recipe:
It's the season for apples!
It's a great quarantine meal since all of the ingredients keep so well.
There's only seven ingredients and that includes EVO and pepper.
Adding the apples and apple cider vinegar really change the flavor profile to almost German cuisine, and god knows it's hard to cook vegan German food.
Did I mention how freaking easy it is to make?

Changes: added a bit more of some ingredients to make it heartier
Ingredients
2 yellow onions, peeled and very thinly sliced
2 red onions, peeled and very thinly sliced
2 #apples, cored and very thinly sliced
4 1/2 cups vegetable broth (homemade to reduce sodium)
1/3 cup apple cider vinegar
~1 tbsp olive oil
Pepper, to taste
Instructions
Heat oil in a large saucepan. Add the onions and sauté for about 10 minutes. Keep stirring so that the onions do not burn.
Add apple slices to the onions and sauté together for 2 more minutes.
Add vegetable broth and apple cider. Let simmer for 15-20 minutes. Season with pepper.
Serve hot. I sprinkled some homemade croutons on top the first time I ate it. I reheated it without and it was just as good.
