Last month I experimented with building a meal around Korean lentils. Essentially, I poured the lentils over gojuchang flavored mash potatoes and served with a side carrot salad. Tonight, it's the same concept just with #Moroccan flavors.
Slightly Modified a Contentedness Cooking Recipe | Serves: 4 | Time: ~ 30 min
Ingredients
EVO, for sauteing
1 cup onions, chopped
5 cloves garlic, minced
1 cup green #lentils, uncooked
2 14 oz cans chopped #tomatoes
3 tsp cumin
2 tsp paprika
S&P, to taste
4 tsp Ras El Hanout
Instructions
Heat a pot with a bit of oil. Add garlic and onions. Saute them for around 4 minutes. Then add lentils and chopped tomatoes.
Finally, season with cumin, paprika spice, and Ras el Hanout. Let everything simmer on medium heat for around 20 minutes until lentils are soft and tender but leave some texture.
Probably great over rice, which is why I've tagged it for that category, but I served over mashed maakouda batata with a side of Moroccan carrots.
