Moroccan Scramble Eggs with Couscous

I know I've been bad with veganizing the weekends, but eggs are soooooo delicious and so is this recipe. If you're a meat eater, I think this would be an excellent side for some lamb kebabs.


Changes: I added spinach and halved the amount of onion.


Moroccan couscous egg scramble

Ingredients

4 eggs (could probably have done egg whites, now that I think about it)

1/2 cup uncooked #couscous

6 Sun dried #tomatoes, chopped

1/2 onion, finely chopped

1 handful of #spinach, chopped

1 tsp ground cumin

1 tsp ground cinnamon

1 handful fresh cilantro, chopped

1 tbsp lemon juice


Ingredients

Cook couscous following directions on the packet.


Meanwhile fry onion until cooked then add sun dried tomatoes, spinach, cumin and cinnamon.


Once couscous is cooked add it to the frying pan and stir to mix in with onion, spinach and spices.


Add lemon juice.


Remove from heat and crack eggs into couscous.


Stir to combine and return to heat.


Cook gently until eggs are cooked.


Garnish with fresh cilantro finely chopped.
