What I changed: used basil paste instead of fresh basil.

Ingredients
1 red #mango, peeled, sliced & pit discarded
1/2 cup basil paste
2 cloves garlic
1/2 tbsp lemon juice
1/4 EVO
1 pinch sea salt
Ingredients
Blend everything in a Ninja bullet until smooth.
Use as a dip or in a noodle or rice dish. The original article suggested a soba noodle salad. We used it over cauliflower rice last night. I could see it being super delicious over some hearts of palm scallops, too.
This morning I put it over some toast and egg whites. I think I'm going to make Caribbean inspired eggs Benedict with an altered version of this pesto as the hollandaise.
