I took an "easy" recipe, and made it straight up lazy. Why do I have so many mixed seasonings if I'm gonna be mixing my own later? Nonsense.

Changes: used AlbuKirky green chile seasoning instead of the mix laid out; used lime juice instead of a lime. Side not, I use that green chile rub on everything, especially JUST eggs.
Ingredients
2 tablespoons oil
1 block firm tofu, pressed (takes about 15-30 min) and sliced into small cubes
1 red bell pepper, cut into 1/2″ strips (about 1 cup)
1 yellow bell pepper, cut into 1/2″ strips (about 1 cup)
1 green bell pepper, cut into 1/2″ strips (about 1 cup)
1 medium white onion, cut into 1/2″ strips (about 1 cup)
2-3 tsp (or to taste) your favorite seasoning
Lime juice
Cilantro
Rice, to serve (I used cauliflower rice)
Instructions
Preheat oven to 400°F and line a large baking sheet with parchment paper or a silicone baking mat.
Add the tofu and vegetables to a large baking sheet and drizzle with oil and mix. Coat with all of the seasoning and mix once more.
Evenly distribute everything on the baking sheet and bake for about 45 minutes, mixing every 15 minutes.
Divvy rice into bowls. Top with the fajita mix. Drizzle with lime juice and garnish with fresh cilantro. Enjoy!
