What I changed: A LOT. I made this so lazy. I basically kept the onion, garlic, and jackfruit only, and then used the marinade to do the rest.
I also halved the amount of onion and garlic, because we're running low. Not being able to go to the grocery store every other day sucks. I also didn't consider how much extra cooking we'd be doing by both being home for lunch. We've definitely torn through onions and garlic.

Ingredients
2 20-can cans of #jackfruit in water
EVO for cooking
1/2 onion, chopped
1 garlic clove, minced
S&P, to taste
To serve: apple, cabbage, & carrot slaw
Instructions
Drain and rinse the jackfruit. Marinate it in the vinaigrette while you're chopping and sauteeing the onion and garlic.
Heat a skillet over medium. Add EVO and saute onion form 3 minutes. Then add the garlic, and cook another 1 minute.
Now add the marinated jackfruit and cook another 20 minutes. Shred the jackfruit with the a fork along the way. Add S&P to taste.
Serve however you want. Today we through it on wraps and topped with slaw.
