For the past several months I've been leaning pretty hard on smoothies for breakfast. I never really measure out the ingredients: 1 banana, handful of spinach, frozen berries, cashew milk, and peanut butter. I'm starting to get sick of it and before I plunge back into ordering up buttery croissants on the regular I figured I'd give a new type of smoothie a try. I haven't had all that much kale recently, and it's apple season. Why not?
Verdict: It's pretty good, but could be better. I gotta find a way to make them a bit creamier.
Inspiration: A Virtual Vegan | Serves: 1 | Time: 5 min
Changes: used more kale; skipped chia seeds and flax seed; replaced maple syrup with agave nectar.
Ingredients
Handful #kale leaves , washed with stems removed
1 large apple, cored (roughly chop to make life a little easier on your poor blender)
1-2 tbsp agave nectar
1 tbsp lemon juice
¾ cup cashew milk
5 ice cubes
1 tbsp almond butter
Instructions
Throw it all in a Vitamix or Ninja Bullet mixer. Blend until smooth. Enjoy!
