Ingredients
1 can young #jackfruit (pulled apart into strips)
4 ripe yellow #plantains, peeled
1 15oz can black #beans, drained and rinsed
1 onion, diced
1 jalapeño, diced
Cherry #tomatoes, quartered
Cilantro
1 #avocado
2 tbsp Jerk seasoning
Instructions
Preheat the oven to 400 degrees.
Prepare all of the fresh ingredients as directed above.
Place the peeled plantains on a foil lined baking sheet. Bake for 15 minutes. Flip the plantains and bake for an additional 15 minutes.
Meanwhile, In a deep frying pan over medium high heat, sauté the onions for 2-3 minutes. Stir frequently.
Add the shredded jackfruit and spice mix to the pan. Sauté for an additional 4-5 minutes. Stirring frequently.
Add the beans to the pan and stir to combine.
Once the plantains are cool enough to touch, slice the plantains down the middle. Be careful not to go all the way through the plantain though. Slightly open each plantain at the cut. It should resemble a canoe or boat.
Fill with the jackfruit mixture. Be sure to stuff that as full as you can.
Bake for 5 minutes.
Garnish with fresh cilantro, jalapeños, tomatoes, and avocado.
