Jamaican Jerk Jackfruit Bowls with Hibiscus Salsa

Changes: lots. I mashed a lot of recipes together. Review each of them if you'd like to know more.


Note: Bowls are great and all, but when there are so many separate components, it's easy to get overwhelmed. Get organized before you start. Think "morning show" prep for your ingredients so you're not measuring while you manage 4 burners.


Ingredients


Jackfruit

20 oz can young green #jackfruit

2 tsp EVO divided

1 1/2 tbsp jerk seasoning

1 tsp or more lime juice

2 cups water

1/4 to 1/2 tsp sugar


Hibiscus Flower Salsa

1 cups dried #hibiscus flowers aim for whole flowers, not cut

1 shallot, diced

1/4 cup finely chopped fresh cilantro

1 tbsp lime juice

1/2 tbsp oil

2 cloves garlic, minced


Black Beans

1 tsp oil

1/2 cup chopped onion

2 cloves of garlic, finely chopped

1 15 oz can black #beans

1/4 tsp all spice

1/2 tsp thyme

1/4 tsp cayenne

Salt to taste

1 1/2 tbsp orange juice

1/4 cup water


To serve

Rice (I used cauliflower rice)


Instructions


Jackfruit

Drain the jackfruit and wash well. Squeeze out the liquid really well by pressing the jackfruit pieces in a paper napkin. Shred in a food processor or thinly slice using a knife. Heat 1 tsp oil in a skillet over medium heat. Add shredded jackfruit and Jamaican jerk seasoning. Cook for 2-3 mins or until the spices start to smell roasted. Add lime juice and water and sugar and cook partially covered for 25 to 30 minutes. Stir occasionally.


Hibiscus Flower Salsa

Combine hibiscus and 4 cups of water in a medium saucepan. Bring to a boil, partially cover, and cook for 10 minutes. Strain out the hibiscus, saving the water for another use. Rinse the hibiscus under hot water until water runs clear. Drain well, squeezing out as much moisture as possible.


Heat oil over medium heat in a large pan. Add hibiscus, onion, and garlic. Cook until onion for 10 min. Remove from heat. Sprinkle lime and cilantro on top.


Beans

Heat oil in a skillet over medium heat. Add onions and garlic and cook until translucent. 4-5 mins. Add black beans, spices, water and orange juice and simmer for 10 mins. Stir occasionally.


Assemble!

Dole out rice into bowls, followed by jackfruit, beans, and salsa. Enjoy!
