What I changed:
Used chard instead of collard greens
Used dry thyme
Halved the amount of tomato, because that's all I had on hand
Skipped cayenne

Ingredients
4 cups #chard, torn from stems, washed, chopped and tightly packed
1 tbsp Tubby Olive Baklouti Green Chili Olive Oil
1 small onion, chopped
2 cloves garlic, minced
2 green onions, chopped
1 tsp thyme
1/2 medium #tomato, chopped
Salt to taste
2 tbsp water
Instructions
Place oil in a large pot, add onion, garlic, spring onion, thyme, and #tomatoes on medium heat, saute; until onion is translucent. Add chard and water, allow to simmer on low heat for 5-10 minutes or until tender.
