Threw this together for brinner to get rid of some ingredients before we headed out for a last weekend last week. Delish, and definitely something to keep in mind for a hangover brunch.

Changes: made it into a sandwich; added corn and beans to the batter; added hot honey
Ingredients
Waffles
1 cup all purpose flour
2 tbsp cornmeal
1/4 tsp baking soda
¼ tsp salt
Dash of cayenne pepper
Dash of paprika
1 ¼ cups vegan buttermilk (you basically throw a tablespoon of lemon juice or apple cider vinegar into your vegan milk and let it sit for 5 min.)
1 large eggs
1/3 cup canola oil or any vegetable oil
1/2 cup shredded vegan cheese
1/4 cup black #beans
1/4 cup #corn kernels
1 jalapeño seeded and finely diced
To Serve
JUST Egg

Hot honey
Instructions
In a large bowl, whisk flour, cornmeal, baking soda, salt, cayenne pepper and tsp paprika until combined.
In another bowl, whisk vegan buttermilk, egg and canola oil until smooth and incorporated.
Add your wet ingredients to your dry ingredients and gently stir until combined (see my notes about this in the post above). Fold vegan cheese, beans, corn, and diced jalapeños.
Cook according to your waffle iron’s instructions.
Meanwhile, prepare your vegan sausage and JUST egg.
Plate your waffles. Add JUST egg and sausage and drizzle some hot honey on top. Make into a sandwich. Enjoy!
