Irish Soda Bread Scones

Happy St. Patrick's Day! We may be quarantined, but the party can't stop, won't stop.


Makes: ~4 large scones | Time: ~30 min

Ingredients

1 1/4 cups almond milk

1 tbsp canola oil

1 tbsp white vinegar

3 cups whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 cup currants


Instructions

Preheat oven to 350F.


Combine almond milk, oil, and vinegar in a small bowl set aside.


Combine flour, baking soda, baking powder, and salt in a large bowl. Mix well. Add currants and mix well again.


Add milk mixture slowly and in small increments. You might not need all of it. Mix together well and form into a large bowl.


On a floured surface add the bowl. Flatten it into a circle about 1 inch thick. Cut into 4 wedges. Move wedges to lightly oiled baking sheet.


Put wedges in the oven and bake for 16-20 min (until golden brown). Enjoy!
