I love tuna salad as a lunch staple, but obviously, that is not vegetarian. I've made chickpea salads to make up for it, but it's still not scratching the itch. Enter hearts of palm crab-style salad. After tasting this, I'm pretty sure immitation crab meat is made from hearts of palm, and if it's not, it should be. Itch scratched.

Changes: used capers instead of black olives and reduced the amount; added a splash of lemon juice
Ingredients
1 lb #HeartsOfPalm, drained and chopped
1/2 cup celery, chopped
1/2 cup vegan mayonnaise
1/4 cup capers
2 tbsp red onion
2 tbsp Italian flat-leaf parsley
1 tsp yellow mustard
1/2 tsp Old Bay seasoning
1/4 tsp ground black pepper
1/8 tsp garlic powder
Splash of lemon juice
Instructions
Mix all the ingredients together in a large bowl. Stir and combine well. Cover and chill for at least an hour before serving.
