Changes: skipped the lemon dressing and just doused the salad with lemon juice, to taste
Ingredients
8 oz dry orzo pasta
1 red onion, finely chopped
2 cups cherry #tomatoes halved
1 medium #zucchini, diced
½ cup kalamata #olives sliced
5.3 oz (150 g) vegan feta crumbled
Fresh basil, chopped
Lemon juice, to taste
Instructions
Cook pasta according to package instructions. Let cool. Mix all ingredients together. Keep in fridge until you're ready to eat.
