The obsession with #apples marches on, but really I found this recipe while searching for horseradish recipes. We're getting close to the holidays, and for me, that means horseradish soup, so I've been Jonesin'.
Source: Food & Wine | Serves: 2 | Time: 15 min
Changes: couldn't find raisin-nut bread and I didn't want to roll the dice with cinnamon bread; used 4x as much horseradish
Ingredients
4 slices of seedy bread
2 oz goat cheese
1/2 Granny Smith apple, thinly sliced (snack on the rest)
2 tbsp horseradish
1 tbsp vegan butter spread
Instructions
Preheat a panini press or a grill pan. Spread the bread slices with the goat cheese. Top half of the bread with the apple slices and horseradish. Close the sandwiches and butter the outsides.
Press the sandwiches until the bread is toasted and the cheese is warm, about 5 minutes. You can also cook on the stovetop like a regular grilled cheese, but who doesn't love grill marks?!
Finally, cut the sandwiches in half, transfer to plates and serve right away.
