Eggs Hidden Springs

We came up with this kind of on the fly at the cabin this weekend, which is why we're calling it Eggs "Hidden Springs". It's poached eggs over brussels sprouts and sweet potato cakes and covered with a sweet potato cheese sauce.


It's obviously not vegan since there are eggs involved. There are ways to make tofu seem like eggs, but that's a no go for me because of the soy. If you have any non soy poached egg replacement ideas, please let me know in the contents :)


Component 1: Brussels Sprouts and Sweet Potato Cakes


Inspired by Kitchen Window Clovers | Serves: 4 Patties | Time: ~20 min


Ingredients

1/2 lb Brussels sprouts

1 small sweet potato

1 medium-small cloves garlic, grated or crushed

1/2 tsp salt

Dash of thyme

Dash of cayenne

Dash of cumin

Cooking oil of choice for the pan


Instructions

Scrub the potato and poke holes in it with a fork. Microwave the potato for 5 minutes. Set aside.


Cut all the little heels off the sprouts, and then shred them. Combine the shredded sprouts, the garlic, salt, thyme, cayenne, and cumin. Mix well.


Heat a little bit of coconut oil in a pan over medium-high heat. Cook the shredded spouts for about 4 minutes, stirring occasionally. Remove from heat.


Peel the potato and smash it in the bottom of a bowl. Add the par-cooked sprouts over it. Combine and mix well.


Form patties that are about 1/4 inch thick and 3 inches in diameter.


Heat a little more oil in the pan, over medium heat this time. Cook the patties for three minutes on on side, and then flip and cook for three more minutes.


Component 2: Poached Eggs


Ingredients

4 eggs

water

Seasoning of choice


Not gonna lie. I have no idea how to poach egg. We have an egg poaching pan and we used that. Here's a link to good instructions though: https://www.bbcgoodfood.com/videos/techniques/how-poach-egg.


Component 3: Sweet Potato "Cheese" Sauce


Recipe by Connoisseurus Veg | Serves: 6 (you'll have leftovers, I enjoyed dipping pretzels in it) | Time: ~25 minutes


Ingredients

1 medium sweet potato, peeled and diced into 1/2 to 1 inch cubes

1/4 cup coconut milk

3 tbsp nutritional yeast flakes

3 tbsp olive oil or other vegetable oil

2 tbsp coconut aminos

2 tbsp lemon juice

1 tbsp sriracha sauce (or to taste)

1/2 tsp garlic powder

1/4 tsp salt, or to taste


Instructions

Place the sweet potato cubes into a medium saucepan and cover with water. Place the pot on stove over high heat and bring to a boil. Lower the heat and allow to simmer until soft, about 15 minutes. Drain and allow the potatoes to cool a bit.


Place the sweet potato and all remaining ingredients into a food processor bowl. Blend until smooth, stopping to scrape down sides of the bowl as needed. Taste test and adjust seasonings as needed. Blend again.


Assemble


Add patties to plate. Add eggs to patties. Drizzle with the "cheese" sauce. Enjoy!
