I've been eating way too many carbs lately, so that ain't great, but pasta is just so easy to make a small portion of for lunch, so.... here we are.
Can't remember which Instagram account I nabbed this one from, so sorry about that. Some good news, if you like traditional creamed spinach, the sauce here could be an excellent replacement. I'll probably try doing that come colder days when I start making lentil loaves and sich.
Makes: 1 serving | Time: ~20 min.
Ingredients
1/4 cup #walnuts, chopped
1 tsp EVO
1 garlic clove, minced
1 tbsp #tahini
1 tbsp nutritional yeast
1 pinch salt
3 tbsp water
1/2 tsp onion powder
1 1/2 cups fresh baby #spinach
2 oz of pasta of choice (I did spinach fettuccine, Spinach in your face!)
Instructions
Cook the pasta according to package instructions.
While the pasta is cooking, saute the garlic in a pan with the oil and the chopped nuts over medium heat for 2-3 minutes.
Add the spinach to the pan and mix the tahini with the salt, water and nutritional yeast in a bowl using a whisk or a fork, then add the mix to the pan. Cook for one minute.
Once the pasta is cooked, add it to the pan, mix well and serve everything together.
