Changes: amounts are slightly off since I converted to US standard
Ingredients
2 tbsp vegetable oil
1 medium onion, roughly chopped
1 head #celery, washed and chopped
1 medium Yukon potato, washed and chopped
4 1/4 cups veggie broth (homemade to reduce sodium)
3/4 cup #cashews
Seasoning of choice, to taste (I did Paprika, S&P)
Instructions
Heat the oil in a large saucepan and gently fry the onion and celery until the onion is transparent (about 5-10 minutes). Add the potatoes and stir round a little. Add the stock and the cashews, bring to the boil, cover and simmer for 20 minutes. Allow to cool slightly then blend to a smooth consistency. Reheat to serve and season to taste. To me, the initial flavor tasted like Thanksgiving, so I went with what I put on my potatoes: paprika, salt and pepper.
