What I changed:
Increased the amount of cooked couscous by 1 cup
Made it vegan by using Bob's Red Mill egg replacers
Ingredients
3 cups #couscous cooked (I cooked the couscous a couple hours in advance in veggie stock, because I had some homemade broth on hand)
4 Bob Red's Mill egg replacers
2 green onions chopped fine
2 cloves garlic minced
1 tsp ras el hanout
1/2 red #BellPepper diced
2 tbsp fresh parsley chopped
2 tbsp whole wheat flour
2 tbsp olive oil
salt
Instructions
Mix all the ingredients together. Heat a large skillet over medium. Add some EVO for frying. Add the patties and cook for 3 minutes on each side. Serve with za'atar seasoned vegan mayo.

What I changed:
Used one mango instead of two #mangoes
Replaced cucumber with zucchini
Made fewer sumac onions
Skipped the salt in the sumac onions since there's more in the salad
Ingredients
Sumac Onions
1/3 cup red onion, thinly sliced
1/2 tbsp red wine vinegar
1/2 tsp ground sumac
Salad
1 #mango, peeled and cut around the pit into small cubes
1 #zucchini, diced
3 tbsp fresh mint, chopped
3 tbsp EVO
2 tsp lemon juice
1 tsp salt
Instructions
Combine the onion ingredients in a bowl and mix well. Then add the remaining salad ingredients and mix well. I of course topped our savory waffles with them tonight, but I can see having this as a side or mixing it with some Greek yogurt.
