Hooray for #breakfast! Or is it #brunch by this hour? Should I pour myself a mimosa?
Slightly Modified a Genius Kitchen Recipe | Serves: 8 waffles | Time: 15 min
Ingredients
2 cups cashew milk
1 tsp apple cider vinegar
1 1⁄2 cups cornmeal
1 cup whole wheat flour
1 tbsp baking powder
1⁄2 tsp salt
2 tbsp sugar
2 tbsp nutritional yeast
1⁄4 cup canola oil
Add ons: kale tabouli salad, sriracha, an egg if you're not into the whole vegan thing. Today, my husband was about the sous vide eggs.
Instructions
Preheat waffle iron.
Measure milk in large measuring cup, add vinegar and set aside to curdle.
In a large mixing bowl, mix cornmeal, flour, baking powder, salt sugar, and nutritional yeast.
Make well in center and add milk mixture and oil.
Mix until smooth.
Cook waffles according to waffle iron directions!
