Coconut Waffles with Chilled Mango-Cherry Soup

Slightly Modified Waffle Recipe from Healthy Maven | Serves: 2 large waffles | Time: ~20 minutes


Ingredients

3/4 cup oat flour

1/4 cup of unsweetened coconut flakes

3/4 tsp baking powder

1/4 tsp cinnamon

1 Neat egg

1/s tsp vanilla

2 tbsp agave syrup

1/4 cup coconut oil, melted (plus more for greasing waffle-iron)

1 1/2 cups lite coconut milk

pinch of salt

Served with almond butter


Instructions

Turn on waffle-iron and let heat up.


In a large bowl combine dry ingredients.


Melt coconut oil and combine with vanilla, maple syrup, and coconut milk. Add in neat egg.


Add wet ingredients to dry ingredients and mix thoroughly. Waffle batter will be thick.


Spray waffle iron with non-stick spray or grease using melted coconut oil.


Add batter to iron and follow waffle iron instructions to tell you when the waffle is done.


Soup Recipe by Whole Foods | Serves: 4 cups | Time: ~10 min + chill time


Ingredients

3 ripe #mangoes, peeled and sliced

2 cups pitted #cherries

2 tablespoons lime juice

1/2 cup fresh mint

1 (1-inch) piece fresh ginger, chopped

2 #kiwis, peeled and thinly sliced, for garnish


Instructions

Blend all ingredients (except for kiwis). Strain through a sieve. Chill for at least one hour (I did overnight). Garnish with kiwi slices and serve.
