Chilled Lemon Basil Avocado Soup

Slightly modified recipe by Soup Addict| Serves: 4 | Time: 15 min + chill time

Ingredients

2 ripe #avocados, roughly chopped (peeled, pit discarded)

1 cup lite coconut milk

1 cup veggie broth

2 tbsp lemon juice

1 tbsp white wine vinegar

1 tbsp basil, chopped

2 tsp shallots, minced


Instructions

Add all ingredients to a blender and puree until very smooth. Refrigerate for at least 2 hours to let the flavors blend (can be made the night before).
