A lot more flavor than I was expecting. Cooking with peaches is really life changing...

Chickpea, Zucchini, and Peach Curry

Changes: replaced black eyed peas with #chickpeas; replaced soy milk with coconut milk


Ingredients

1 can chickpeas, drained

½ cup onion, chopped

½ cup #tomatoes, chopped

2 #peaches, sliced

1 med-lg #zucchini, sliced

1/2 tbsp EVO

2 tbsp garlic, crushed

2 tsp honey or agave nectar

1 can coconut milk

Salt, to taste

¼ tsp turmeric

1 tsp garam masala

1 tbsp dried fenugreek leaves

Rice or cauliflower rice, to serve


Instructions

Heat oil in a pan and add chopped onions to it. Sauté for 5 minutes.


Add sliced zucchini and sauté for 2-3 minutes.


Now add peaches and tomatoes and sauté for 2 minutes.


Add crushed garlic, salt and turmeric and mix well. Sauté for 5 minutes.


Now add #beans, garam masala, coconut milk and honey. Mix well and cook covered for 5 minutes on medium-high heat.


Add dried fenugreek leaves and mix well. Cook covered for another 5-7 minutes and remove from heat.


Serve with rice.
