Decidedly not a vegan recipe, but this pizza was delicious and easy to make.

Changes: shortcuts! I used frozen pizza crusts and frozen cherries. -
Ingredients
2 Caulipower Pizza Crusts (do not defrost)
4 tbsp extra-virgin olive oil, divided
2 tbsp vegan butter (I know this recipe has cheese, but we don't have to go crazy)
1 large yellow onion, peeled and sliced
1/2 tsp each S&P
2 tbsp balsamic vinegar
1 tbsp fresh rosemary
6 ounces brie cheese, thinly sliced
1 1/2 cups frozen #cherries, defrosted & chopped
1/2 cup crumbled gorgonzola cheese
Basil for garnish
Instructions
Preheat your oven to 425F.
In a skillet over medium heat, warm 2 tablespoons of the olive oil and melt the butter. Add the sliced onions, salt and black pepper. Then turn the heat down to low and cook the onions, stirring occasionally, for about 15 minutes or until the onions are well softened. Stir in the balsamic vinegar and rosemary and cook for 2 minutes more. Remove the skillet from the heat and set aside.
Add the crusts to baking sheets and brush the crusts with olive oil. Arrange the brie cheese slices over the dough in a single layer. Then top with the caramelized onions, cherries and gorgonzola cheese. Transfer the baking sheet to your pre-heated oven and cook the pizza for 12-15 minutes.
Remove the pizzas from oven and sprinkle the basil on top. Cool a little bit before slicing and enjoying!
