Did some culinary jazz last night and came up with this beauty. Easy, tasty, filling, can be made vegan if you find the right crust.
Serves: 2 small pizzas | Time: 35 min
Ingredients
1-2 tbsp hamburger seasoning of choice
1 cup sun-dried tomato pesto
1/2 cup cherry #tomatoes, halves
1/2 cup hamburger #pickles, chopped
[If you're not allergic, some diced red onion would probably be delish]
1/2 cup shredded vegan cheese
2 Cauliplower pizza crusts (contains egg)
Cooking spray
1 avocado, chopped
Sun-dried Tomato Pesto
3 cups basil, packed
1 cup sun dried tomatoes
1/2 cup nutritional yeast
1/4 cup walnuts
1 - 2 garlic cloves
Juice of 1/2 a lemon
Salt & pepper to taste
1/4 cup olive oil
1/2 water
Instructions
Preheat the oven to 425F.
Follow package instructions to prep the Plant-based Ground. When you go to break up the fake meat for the last 12 minutes, add the hamburger seasoning.
Meanwhile, blend all the pesto ingredients together.
Spray each crust with a bit of oil. Slather on the pesto (you should end up with a bit leftover). Then sprinkle on the Plant-based ground, tomatoes, pickles, and shredded cheese. Pop them in the oven for 12-15 minutes.
Remove from oven. Slice up. Add the avocado. Enjoy!
