The hubs loves ramen and we both love breakfast, so why not? Plus it's not like we didn't love the breakfast noodles before (well, breakfast zoodles). Great news: it's sooooooo good.

Ingredients
2 servings ramen noodles (I buy them plain. Toss seasoning out if you have the common ramen.)
4 Beyond Meat breakfast sausages, chopped
2 eggs or equivalent in egg whites
1 cup shredded 3-pepper colby jack
2 green onions, sliced
1 tsp chili oil
Instructions
Prepare noodles according to package instructions. Save 1/4 cup of cooking water to loosen sauce later, if needed. Drain noodles, toss with oil so they don't stick.
Heat chili oil in medium skillet over medium heat. Cook Beyond Meat sausage for 4-5 min continuously stirring. As the sausage cooks it will release more moisture.
Reduce heat a little bit. Beat eggs or egg whites with fork. Mix in cheese. Pour egg-cheese mixture to skillet and toss with sasauge. Eggs will cook through in about 3-4 min minutes. Continue stirring to make sure the cheese doesn't stick to the skillet.
Now dd noodles and combine well.
Divide mixture between bowls. Garnish with green onion. Gird your loins for the heat and enjoy!
