Ingredients
1/2 pound riced #cauliflower (2 cups)
2 roma #tomatoes seeded and chopped (about 1 cup)
1 large zucchini peeled and chopped
2 green onions sliced
1 cup chopped fresh parsley
1 cup chopped fresh mint
1/4 cup lemon juice
1/4 cup olive oil
2 cloves garlic, minced
S&P, to taste
Instructions
Combine all ingredients. Pop in the fridge for at least 30 minutes. I made it at the beginning of the day.
