Straight from hell yeah it's vegan | Serves: 2-4 | Time: ~15 min
Ingredients
5 c #broccoli (about 2 crowns), broken into florets
1 c #spinach, optional
1½ c vegetable stock
2 Tbsp tahini
2 Tbsp raw cashews
1 small garlic clove
½ tsp salt
sesame seeds and freshly ground pepper, for serving
Instructions
Steam broccoli until bright green and just tender.
Transfer broccoli to a blender, add remaining ingredients, and blend until completely smooth.
Serve hot, garnished with sesame seeds and freshly ground pepper.
