A couple weeks ago, we were up in New York and hit up one of God knows how many Italian restaurants in the East Village where we learned about breakfast pasta. My husband got it and I had extreme food envy. Fast forward to this weekend, when we have an abundance of #zucchini and #carrots on hand and somehow the energy to test out something new.
This was made easy as a tag team effort and a lot of recipes. If I did it on my own, it probably would have taken a bit longer. Here's the gist.
Serves 2 | Time: ~30 min
Ingredients
2 servings of Tasty carrot bacon (I added a tablespoon of liquid smoke)
2 large #zucchini
2 servings of Simply Whisked artichoke pesto
1/2 bunch #kale, destemmed
1 cup cherry #tomatoes, halved
2 #eggs, served how you like
Instructions
Start your carrot bacon first, since it has to bake.
Spiralize your zucchini.
Then make your pesto.
Saute your kale. Add the zoodles.
While the veggies saute, cook your eggs how you like
Once kale and zoodles are cooked through add 2 servings of the pesto and combine well.
Plate. Add eggs, tomato, and carrot bacon. Enjoy!
