Ingredients

1 cup uncooked #quinoa
1 cup #blueberries
1 #avocado, pitted and diced
1 bunch watercress, leaves only, about 2 cups leaves
½ cup chopped walnuts
Lemon Vinaigrette
¼ cup olive oil
2 tbsp lemon juice
3/4 tsp kosher salt
¼ tsp freshly ground black pepper

Instructions

Prepare quinoa according to package directions; cool.
Combine cooled quinoa, blueberries, avocado, watercress and walnuts.
Lemon Vinaigrette Instructions
Whisk olive oil, lemon juice, kosher salt and pepper until blended.
Stir in lemon zest.
Toss with quinoa salad until evenly coated.
