It's a crazy week for work, and I needed something easy to make that scratched the itch to eat bad food (while still staying healthy.) This was freaking delicious!


Beyond Sausage & Kale Salad with Spicy Mustard Dress (GF, V)

Ingredients


Salad

1 cup dried brown #lentils

4 Beyond Meat brat sausages

12 oz #kale chopped


Dressing

4 cloves garlic, minched

4 tbsp dijon or stone ground mustard

3 tbsp red wine vinegar

Salt to taste

6 tablespoon olive oil

1/4 tsp crushed red pepper flakes


Instructions

Cook lentils according to the package, usually using 3x the amount of water as lentils. Add bay leaves to the water at the beginning of cooking. Typically bring to a boil then simmer (or remove from heat) for 15-20 minutes.


Meanwhile mix dressing ingredients together and set aside.


After making the dressing, you should have about 5-10 minutes left on the lentils. Then cut sausage into slices and brown in a hot pan for 3 minutes per side.


When everything is ready, massage dressing all over kale. Divide kale onto plates, then top with lentils and sausage.
