Beyond Beef Curry with Coconut and Mango

So Beyond Meat is not exactly good for you, but sometimes you got to scratch an itch. But hey, it includes #mangoes which supposedly reduces inflammation and helps you balance your cholesterol.


This meal was super delicious, but it might be the last time I cook with Beyond Meat though. I got very stuffed up after eating this, and later I noticed there is apple extract in the list of ingredients. Apples are a no-no, at least for now.

Beyond Beef Curry with Coconut and Mango

Changes: used Beyond Meat; steamed the veggies instead of blanching them, replaced yellow curry paste with yellow curry powder (use 2 tsp instead of 1 tbsp)


Ingredients

1 small head #broccoli, cut into florets

Salt

1 carrot, peeled and sliced

1 large ripe mango, peeled and diced

2 tbsp olive oil

1 lb ground Beyond Beef

2 tsp yellow curry powder

1 can reduced fat coconut milk

S&P, to taste


Instructions

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli florets and carrots, cover, and steam until tender, about 5 minutes.


In a pan, fry Beyond Beef in olive oil for about 7-8 minutes, making sure to get it crumbly like regular ground meat. Add vegetables sauté briefly. Stir in curry and cook briefly. Add coconut milk and cook until heated through. Add diced mango and cook briefly. Season with salt and pepper to taste.
