It's a salad, so it's healthy, right? Right? One thing is for sure, it's delicious and hit the spot!

Changes: used Beyond Beef; replaced onion with fennel; skipped red onion; used vegan cheddar cheese; used a veganized dressing from the second recipe
Ingredients
1 lb ground Beyond Beef
1 fennel bulb, diced
1 tbsp Dijon mustard
Dash of salt and pepper
8 cups shredded romaine #lettuce
1 #avocado, thinly sliced
4 cups diced cherry #tomatoes
1 cup thinly sliced pickles
1 cup shredded vegan cheddar cheese
Dressing (double if you really like dressing)
2 garlic cloves, minced
3 tbsp vegan mayonnaise
1 tbsp Sriracha
1 lemon, juiced
Instructions
Cook ground Beyond Meat about 5 minutes. Add in the fennel and Dijon mustard, stir and cook for an additional 5 minutes until fragrant, stirring frequently. Season with a dash of salt and pepper.
Meanwhile blend all of the dressing ingredients together.
Divide the lettuce among four bowls, top each with equal amounts of the ground beef mixture.
Top with avocado, tomatoes, pickles and vegan cheddar cheese. Drizzle each salad bowl with desired amount of dressing and toss to combine.
