Bell Pepper Slaw

What I changed: amounts, used cabbage instead of celery, used chipotle infused EVO.

Ingredients

1/2 tbsp white wine vinegar

1/2 tsp dijon mustard

1 tbsp chipotle infused EVO

S&P, to taste

2 bell #peppers, thinly sliced (I used red and orange)

3/4 cup red #cabbage, chopped


Instructions

Mix vinegar, mustard, EVO, and S&P in a medium sized bowl. Add peppers and cabbage. Mix well. I made it in the morning and then popped it in the fridge until I was ready for dinner.
