Called an audible this morning since I have some overripe #bananas on hand, and I only need one for tomorrow. These were delicious, and not too sweet, but I'm thinking I might experiment with a more savory version down the line. Maybe Thai spices instead of cinnamon and nutmeg?

Changes: used whole wheat flour, replaced cornstarch with tapioca starch, and replaced brown sugar with coconut sugar
Ingredients
2/3 cups whole wheat flour
1 tsp baking powder
¼ tsp baking soda
4 tsp tapioca starch
¼ tsp cinnamon
Dash of nut meg nutmeg
2 tsp coconut sugar
¼ tsp salt
¼ cup plant-based milk
½ cup mashed ripe banana
2 tsp coconut oil, melted
1 tsp vanilla extract
Spray oil, for the waffle maker
To serve
Nuts
Maple syrup (I added a little sriracha)
Instructions
Put the waffle maker on to preheat (375F) while you mix the batter.
Mix the dry ingredients (flour, baking powder, baking soda, cornstarch, cinnamon, nutmeg, coconut sugar and salt) into a large bowl.
Add soy milk, mashed banana, melted coconut oil and vanilla extract and mix into a thick batter. Don't overmix. It's okay if the batter seems lumpy.
When your waffle maker is hot, grease it with oil or spray it with non-stick spray.
Scoop even amounts of batter into the waffle machine and close the machine. Leave the waffles to cook for roughly 3-5 minutes until golden.
Serve topped with sliced banana and chopped walnuts, with lots of syrup for drizzling.
