This ended up kind of having a Dutch baby pancake consistency which I LOVE.
What I changed:
Used coconut milk (the drinkable version) instead of almond milk
Skipped the vanilla
Used agave instead of maple syrup

Ingredients
1 cup rolled #oats
1/2 cup coconut milk beverage
2 tbsp agave syrup
1 ripe #banana
1 tsp baking powder, optional
1/4 teaspoon salt
Coconut oil, for cooking
Toppings of choice, I did blueberry agave syrup
Instructions
Place all the ingredients in a blender. Process until completely smooth. Brush oil in a large non-stick skillet or griddle over medium heat. Add batter and cook until edges are golden brown, about 2-3 minutes, flip the pancake and cook for another 2-3 minutes. Repeat until batter is all gone.
