Ingredients
2 green #bananas, washed, peeled & cubed
2 tbsp oil
½ tsp mustard seeds
1 #jalapeno, chopped
½ tsp cumin powder
1/8 tsp turmeric
salt, to taste
1 cup onions, finely chopped or sliced
1 15-oz can diced #tomatoes, drained
1 ½ tsp ginger, minced
1 tsp red chili powder
1 tsp garam masala
½ tsp coriander powder
Water
1 tbsp lime juice
2 tbsp cilantro leaves, chopped
#Cauliflower rice, to serve
Instructions
Steam bananas in steamer for 10 to 12 mins on a medium heat.
Meanwhile, heat a pan with oil and crackle the mustard seeds.
Add onions and jalapeno. Saute until the onions turn completely golden. Add ginger and fry until the raw smell goes off.
Add tomatoes, cumin powder, salt and turmeric. Mix and saute until the tomatoes turn mushy.
Add red chili powder, garam masala and coriander powder. Mix and saute for 2 to 3 mins.
Pour half cup water to the pan and stir well. Cook until the mixture turns to a thick gravy like. You can add more water if you like a moist curry.
Add the steamed banana. Stir well. Cover and cook for 3 to 4 mins on a very low flame.
Add cilantro leaves and lime juice. Stir and remove from heat.
Serve with cauliflower rice.

I was really bad at tracking today, but hey, I took a recipe from a blog that says "healthy" in it. That's something right? I wasn't feeling super great this morning, so the only workout I got was walking to and from the grocery store, but that means 1.7 miles of walking. By the end of the night, I'll easily have 6000+ steps. I probably could have drank more water.
